Mashed Millet
1 C. millet
2 C. fresh cauliflower, in small pieces
3 C. water or vegetable stock
Salt, pepper, garlic powder and onion powder to taste
In a large saucepan, combine all ingredients and bring to a boil. Cover, and lower to a simmer for 40-45 minutes. Check at about 20 minutes left to see if you have to add a 1/2 cup more water to prevent it from burning. When done, mash with a potato masher.
