Millet Muffins
Yield: 12 servings
1-1/2 C. Millet flour
1/2 C. soy flour or garbanzo bean flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. orange flavoring
1 C. water or orange juice
1/4 C. vegetable oil
1/4 C. honey
Combine all dry ingredients in a medium bowl. Mix all liquid ingredients together, then add to dry ingredients. Put mixture in well-oiled muffin tins. Bake at 375 for 15-20 minutes or until done.

Thank you for the millet recipes! My son was just looking at the jar of millet sitting on the counter and said, "Mom, are we ever going to eat this again?" LOL Last time I made it plain with honey and butter and hubby complained it was yucky and tasted like bird seed. ha ha So, I will have to try these recipes....hmmmm...pumpkin millet...a pumpkin is sitting cleaned on my counter waiting for it's spot in the oven. ;)
