Chinese Chews

Yield: approx 2 dozen if I remember correctly
3/4 C flour
1/4 tsp salt
1 tsp baking powder
1 C sugar
1 C chopped dates
1 C chopped walnuts
3 well beaten eggs
Butter or margarine
Powdered sugar
Stir dry ingredients together, then add remaining ingredients. Pour into a greased 9x9 inch pan. Bake at 300 for 30-40 minutes until center is done when toothpick in center comes out clean.
Let set and rest 10 minutes. Don't wait longer than 10 minutes or else it cools too much and hardens. You will need to work quickly at this point, enlist helpers to roll faster if you can.
With well buttered hands, take a pinch of dough from the 9x9 pan and roll into 1 inch balls. Roll balls in powdered sugar.
Keep the butter handy, this keeps your hands from burning handling the hot dough.
Take dough from the edges of the pan first, as this part is sometimes a bit crusty and will be difficult to roll as it cools. Squeeze the dough in your hand to work some butter into it can soften it enough to roll.
Random Thought - Because of recent observations, I have concluded that in this day and age, common sense has to be a super power, that very few possess.
Oh my goodness - look at all the awesome cookies! I'll have to check back here when the baking mood finally hits (you know...past baking our bread and the everyday stuff!)
ReplyDeleteI have a cookie recipe that you might like - not really a recipe, so I'll just mention it here. Make your fave sugar cookie recipe, and add some Chinese Five Spice powder. I shape them in crescents...they are yummy, easy, great with tea!
