Chocolate Peppermint Chews
1 bag (12 oz) semisweet chocolate chips (2 cups)
1/3 c corn syrup
1/2 tsp peppermint extract
1/2 tsp vanilla

Line 9x5-inch loaf pan with plastic wrap.

In 2-quart saucepan, melt chocolate over low heat, stirring constantly. Remove from heat. Add corn syrup, extract and vanilla; mix well. Quickly pour into pan; spread evenly.

Refrigerate uncovered about 30 minutes or until firm. Cut chews into 9 rows by 4 rows for 36 square pieces.

Yield: 3 dozen

Random Thought: It doesn't get any easier... Your determination just has to get stronger.

  2. I didn't have any peppermint extract when I made them last time...they still tasted good but it's better with it in for sure.
