Hillbilly Cake
Yield: 12 servingsIngredients
- 2 eggs
- 1 (20 oz) can pineapple
- 2 cups flour
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 1/2 cups sugar
- 1 cup shredded coconut
- Mix eggs and pineapple together.
- Combine flour, soda, salt and sugar and combine with eggs and pineapple mixture..
- Pour into 9x13x2 inch pan and top with coconut.
- Bake at 350 degrees for 45 minutes
TOPPING:
1 c. milk
1 c. sugar
1 stick butter
Combine milk, sugar and butter and boil for 3 minutes. Punch holes in top of cake with fork and spoon frosting over top
