Hillbilly Cake

Hillbilly Cake
Yield: 12 servings

Ingredients
  • 2 eggs
  • 1 (20 oz) can pineapple
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1 1/2 cups sugar
  • 1 cup shredded coconut
Directions
  1. Mix eggs and pineapple together.
  2. Combine flour, soda, salt and sugar and combine with eggs and pineapple mixture..
  3. Pour into 9x13x2 inch pan and top with coconut.
  4. Bake at 350 degrees for 45 minutes


TOPPING:

1 c. milk
1 c. sugar
1 stick butter

Combine milk, sugar and butter and boil for 3 minutes. Punch holes in top of cake with fork and spoon frosting over top
