Pineapple Juice from Scraps
Canning - Waterbath
Yield: 1 quart Jar
1 cup fresh pineapple cores, chopped
1/4 cup white sugar
Boiling water
* Sterilize canning jars; keep warm until ready to fill. Heat flat lids in hot water, Preheat your waterbath canner.
For each quart jar fill with 1 cup pineapple cores and 1/4 cup sugar. Add boiling water to jar.
Fill jars to 1/2 inch headspace Remove air bubbles, adjust headspace if needed, wipe jar rims, place hot lids and rings on each jar. Place jars on the rack in the preheated canner.
Process in a waterbath canner for 20 minutes.
How to use a Waterbath Canner
Wait at least a month before using. To Serve: Strain out cores and use in any recipe calling for sweetened pineapple juice.
