Hungarian Goulash
Main Dishes - Beef

Yield: 4 servings

2 Tbsp olive oil
1 cup white onions, sliced
1/2 seeded, chopped green bell pepper
1 clove garlic, minced
3 Tbsp Hungarian sweet paprika
1/2 tsp kosher salt
1/4 tsp ground black pepper
1 1/2 pounds beef stew meat, cut into 1 1/2 inch cubes
1 Tbsp tomato paste or ketchup
1/2 cup beef broth
1/4 cup red wine


Heat oil in a Dutch oven over medium heat. Cook onions, garlic and bell pepper in oil for about 2 minutes.

In a medium bowl, combine paprika, salt and pepper. Coat beef cubes in spice mixture, and add to onions. Cook until brown on all sides. Pour in tomato paste, broth and wine. Combine well and cover.

Transfer dutch oven to oven and bake at 325 for 2 hours or until meat is tender. Alternately you could transfer to a crock pot and cook on low 4-6 hours.

Serve over dumplings, cooked noodles, mashed potatoes, or cooked rice.
