Banana Muffins

 3/4 C flour

3/4 C oats

1 tsp baking powder

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp nutmeg

2 eggs

1 C mashed banana (2 medium)

1/2 C brown sugar

1/4 C milk

1/4 C canola oil

1/2 C chopped nuts

 

Pour into muffin tin. 

Bake at 395 F for 18 minutes

Yield: approx 1 dozen


1 box yellow or spice cake mix
1 can (15oz) pumpkin puree (not the pie mix)

Pour dry cake mix into bowl, add the can of pumpkin. Mix together and pour into paper lined muffin tin, Bake at 350 F for 20-25 minutes.

Yield: 6 servings

3 C flour
1 tsp salt
1 tsp garlic powder
1 tsp dry italian seasoning 
1 Tbsp baking powder
1 C milk
1/2 C butter (1 stick)
1 tsp additional garlic powder

Place the butter in a 9 by 13-inch pan. Place the pan in the oven and set to preheat to 425° When the butter is melted, carefully remove the pan from the oven. It will be very hot, so don’t burn yourself. Sprinkle the second teaspoon of garlic powder into the pan

Combine flour, salt, garlic powder, italian seasoning and baking powder. Add milk and stir with a big spoon until you get a ball of dough that leaves the sides of the bowl. You may have to dust the ball of dough with a little flour if it seems sticky to you. Gently knead the ball of dough right there in the bowl about 5 or 6 times.

Turn dough on the counter or on waxed paper. Using a rolling pin roll the dough out into a rectangle shape. You are aiming for a rectangle that will fit into a 9 by 13-inch pan. Cut the dough into narrow strips and lay them in the pan, flip them over so they are coated in butter. Sprinkle with a bit of parmesan cheese if desired.

Return pan to oven (use gloves pan will still be hot) and bake at 425 for 20 minutes.

four cups white flour
four cups whole wheat flour
four cups warm water
1 tbsp dried yeast
1 tbsp salt
1/2 cup sugar
3 one pound coffee cans, or other non-lined metal cans of approximate size

Mix all the dry ingredients with half the flour, then add the water. To this semi-liquid mix, add one cup of flour at a time, beating it in well. You may not be able to use the full eight cups; that’s OK.

You don’t knead this bread, just let it rise to double in bulk once in the mixing bowl, followed by one rising in the coffee cans. Fill the cans halfway or just a bit more, then bake them at 350 degrees for about an hour.

Millet Bread
Yield: 1 loaf


1 C. Plain yogurt or buttermilk
1/4 C. Butter
1 tbsp. Honey
1 pkg Dry yeast
1/4 C. Warm water
2 Eggs
2 C. Millet Flour
1/2 C. Soy Flour or Garbanzo Bean Flour

Combine yogurt and butter in saucepan, heating slowly to melt butter. Dissolve yeast and honey in the warm water; add yogurt mixture and blend. Beat in eggs; add flours and beat well. Pour into well-oiled loaf pan and let rise for 45 minutes. Bake at 375 F. for 40-45 minutes or until done. Cool before cutting.

Random Thought - Hell hath no fury like a Pumpkin PopTart that hasn't had time to properly cool.

1-1/2 C. Millet flour
1/2 C. soy flour or garbanzo bean flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. orange flavoring
1 C. water or orange juice
1/4 C. vegetable oil
1/4 C. honey

Combine all dry ingredients in a medium bowl. Mix all liquid ingredients together, then add to dry ingredients. Put mixture in well-oiled muffin tins. Bake at 375 for 15-20 minutes or until done.
