Rice Pudding

Rice Pudding

Rice Pudding
Yield: 4 servings

2/3 c. instant rice
2 3/4 c. milk
1/3 c. sugar
1 tbsp. butter
1/2 tsp. salt
1/2 tsp. vanilla
1/4 tsp. nutmeg
1/4 c. raisins
1/3 c. chopped apple


Combine ingredients in a greased baking dish. Bake at 350°  for 1 hour, stirring after 15 minutes and again when pudding is done. Sprinke top with cinnamon if desired. Serve warm or chilled.

Rhubarb Dump Cake


Rhubarb Dump Cake

3 1/2 cups rhubarb, cut into 1/4 inch pieces
1 cup white sugar
1 (3 ounce package) strawberry jell-o
1 package yellow cake mix
1 cup water
1/4 cup butter, melted

Preheat oven to 350 degrees. Grease a 9x13 inch baking dish. Spread the rhubarb evenly in the bottom of the baking dish. Sprinkle the sugar over the rhubarb, then sprinkle the jell-o, and finally the cake mix. Pour the water and melted butter over the top. Do not stir. Bake for 45 minutes or until the rhubarb is tender. Garnish with whipped cream if desired.

Hillbilly Cake

Hillbilly Cake

Hillbilly Cake
Yield: 12 servings

Ingredients
  • 2 eggs
  • 1 (20 oz) can pineapple
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1 1/2 cups sugar
  • 1 cup shredded coconut
Directions
  1. Mix eggs and pineapple together.
  2. Combine flour, soda, salt and sugar and combine with eggs and pineapple mixture..
  3. Pour into 9x13x2 inch pan and top with coconut.
  4. Bake at 350 degrees for 45 minutes


TOPPING:

1 c. milk
1 c. sugar
1 stick butter

Combine milk, sugar and butter and boil for 3 minutes. Punch holes in top of cake with fork and spoon frosting over top

Pineapple Angel Cake

Pineapple Angel Cake

1 Box of Angel Food Cake mix (just the contents of the box)
1 20 ounce can of crushed pineapple in its own juice

Heat oven to 350°F. Spray 10-inch tube pan with cooking spray.
In large bowl, mix dry angel food cake mix and crushed pineapple until combined. Pour into pan. 
Bake 40 to 45 minutes or until deep golden brown. Cool upside down as directed on cake mix box, about 1 hour. Turn cooled cake out onto cooling rack. Use serrated knife to cut into slices.

Oatmeal Cake

Oatmeal Cake - The Senseless Housewife
Yum!! I just love to cook and bake. I was born to be in the kitchen. I also love to eat sweets...my robust figure can attest to that. I hope you enjoy today's dessert recipe.

Oatmeal Cake

1 cup oatmeal
1 1/4 cups boiling water
1 tsp cinnamon
1/2 tsp nutmeg
1 stick butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp baking soda
1 1/2 cups flour

Mix oatmeal, water, cinnamon and nutmeg together. Let set 20 minutes. Cream together butter, brown sugar and white sugar. Add eggs, baking soda, flour and oatmeal. Mix well. Pour into square flat pan and bake @ 350 for 40-45 minutes. Serve plain or frosted.
