Drop Style Sugar Cookies


  • Cook Time: 12 minutes
  • Yield: 15 cookies

Ingredients

  • 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  •  1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
  2. In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on medium-high speed until creamed, about 1 minute. Add the egg and vanilla extract and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  3. Add the dry ingredients to the wet ingredients and mix on low until combined. Dough will be thick and sticky. Scoop large sections of dough (about 2 Tablespoons/40g of dough each) and roll into balls.  Place dough balls onto a large plate or lined baking sheet.
  4. Cover and chill the cookie dough balls in the refrigerator for at least 2 hours (and up to 4 days).
  5. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  6. Arrange chilled cookie dough balls 3 inches apart on the baking sheets. Bake for 12-13 minutes or until lightly browned on the sides. The centers will look very soft.
  7. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Cookies stay fresh covered at room temperature for up to 1 week.

Granola Cookie Logs

 I don't remember where I saved this recipe from, but they sure are tasty!

1 egg
2 tbsp coconut oil (or other oil)
1/3 C strong peppermint tea
1 1/2 C unbleached flour
1/2 C rolled oats
1/2 C sugar
1/2 tsp baking soda
1/3 C almonds, chopped
1/4 C chocolate chips
1/4 C sunflower seeds

Combine egg, oil, and tea in a large bowl. In a smaller bowl, combine flour, oats, sugar, and baking soda.

Add the dry ingredients to the wet, stir slightly and add nuts, chocolate chips and seeds.

Mix until a dry dough forms, adding more tea if needed.

Shape in the form of logs if you wish or drop by spoonful on ungreased cookie sheet.

Bake at 350F degrees for 13 to 15 minutes.

Chinese Chew Cookies

Yield: approx 2 dozen if I remember correctly


3/4 C flour
1/4 tsp salt
1 tsp baking powder
1 C sugar
1 C chopped dates
1 C chopped walnuts
3 well beaten eggs
Butter or margarine
Powdered sugar

Stir dry ingredients together, then add remaining ingredients. Pour into a greased 9x9 inch pan. Bake at 300 for 30-40 minutes until center is done when toothpick in center comes out clean.

Let set and rest 10 minutes. Don't wait longer than 10 minutes or else it cools too much and hardens. You will need to work quickly at this point, enlist helpers to roll faster if you can.

With well buttered hands, take a pinch of dough from the 9x9 pan and roll into 1 inch balls. Roll balls in powdered sugar.

Keep the butter handy, this keeps your hands from burning handling the hot dough.

Take dough from the edges of the pan first, as this part is sometimes a bit crusty and will be difficult to roll as it cools. Squeeze the dough in your hand to work some butter into it can soften it enough to roll.

Random Thought - Because of recent observations, I have concluded that in this day and age, common sense has to be a super power, that very few possess.

1/2 C vegetable oil
8 tbsp cocoa powder
4 tbsp butter
2 C sugar
4 eggs
2 tsp vanilla
4 C flour
2 tsp baking powder
1/2 tsp salt
powdered sugar

Mix oil, cocoa, butter and granulated sugar. Blend in 1 egg at a time until well mixed. Add vanilla. Stir in flour, baking powder and salt into oil mix. Chill several hours or overnight.

Drop by teaspoonfuls into powdered sugar. Roll in sugar and shape into balls. Place 2 inches apart on greased sheets. Bake at 350 for 10-12 minutes (do not overbake)

Frosted Cut-Out Cookies

Cut-Out Cookies
 
3/4 C shortening
1 C sugar
2 eggs
1/2 tsp vanilla extract
2 1/2 C flour
1 tsp baking powder
1 tsp salt

Mix butter, sugar, eggs and extract. Stir together flour, baking powder and salt. Blend into sugar/egg mixture. Chill at least 1 hour.

Roll dough to 1/8 in thick. Using shaped cutters, cut out and place on an ungreased baking sheet. Bake at 400 for 6-8 minutes.

Cookie Icing

1 lb powdered sugar
1/2 C shortening
1 1/2 tsp vanilla extract
1/2 tsp salt
1/4 C water
food coloring

Combine all ingredients and beat until creamy. Seperate into individual bowls and color with food coloring for different colors

Random Thought: If you're too old to party like a rock star, try singing like one. If it embarrasses your teenagers when their friends are over. BONUS POINTS!

No Bake Cookies

No Bake Cookies

2 C sugar
1 stick butter or margarine
1/4 tsp salt
1/4 C milk
1/4 C cocoa powder
2 tbsp powdered coffee creamer
1/2 tsp vanilla
1/2 C peanut butter
3 1/2 C old fashioned oats

Mix together the first six ingredients in a saucepan.

Bring to a boil on the stove. Boil for 1-2 minutes.

Remove from heat. Add the remaining ingredients (add oats last).

Quickly drop by spoonfuls onto wax paper to harden.


Random Thought - The most polite way to tell someone you think they look bad is to ask if they are tired.

Snickerdoodles

1 C margarine
1 1/2 C sugar
2 eggs
2 3/4 C flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
Colored sugars - by holiday baking items or create your own with white sugar/food coloring

Mix margarine, sugar and eggs. Add flour, cream of tartar, baking soda and salt.

Shape into 1 inch balls. Roll balls in the colored sugars. Place 2 inches apart on an ungreased baking sheet. Bake at 400 for 8-10 minutes

Random Thought- Never argue with an idiot. They will drag you down to their level and beat you with experience.

Hungarian Kifli Cookies

Yield:  24 cookies

2 C flour
1/2 lb butter (do not substitute)
1 egg
3/4 C sour cream
1/3 c sugar
2 tsp cinnamon, or more to taste
1/3 c chopped walnuts

Cream butter and flour, stir in egg and sour cream. Form into a ball and refrigerate 3 hours.

Divide dough in thirds, Roll into a circle about 1/4 to 1/8 in thick. (too thin and the nuts will tear it, too thick and its too doughy, experiment a bit)

Combine sugar, cinnamon and nuts, spread over dough. Using a pizza cutter or sharp knife, cut into 8 wedges. Roll up starting at wide end (to resemble crescents).

Repeat twice with remaining dough following same procedure above. Bake on an ungreased sheet for 20 minutes at 375. You can sprinkle with powdered sugar when they are cool if you like

Apple Cheddar Cookies

Yes, my waistline is growing! Since I don't want to be the only robust one here go ahead and give these unusual cookies a try

Apple Cheddar Cookies

1/2 cup butter
1/2 cup sugar
1 large egg
1 tsp vanilla
1 1/2 cup unbleached flour
1/2 tsp baking soda
1/2 tsp cinnamon, ground
1/2 tsp salt
6 oz sharp cheddar cheese, shredded
1 1/2 cup apples, cored, peeled, and chopped
1/4 cup nuts, chopped

Cream the butter and sugar until light and fluffy and then stir in the egg and vanilla. Add the combined dry ingredients, blending well. Stir in the cheese,apples and nuts. Drop rounded teaspoonfuls of the dough onto an ungreased cookie sheet and bake at 375 degrees F. for 15 minutes.
