Hungarian Goulash

Yield: 4 servings

2 Tbsp olive oil
1 cup white onions, sliced
1/2 seeded, chopped green bell pepper
1 clove garlic, minced
3 Tbsp Hungarian sweet paprika
1/2 tsp kosher salt
1/4 tsp ground black pepper
1 1/2 pounds beef stew meat, cut into 1 1/2 inch cubes
1 Tbsp tomato paste or ketchup
1/2 cup beef broth
1/4 cup red wine


Heat oil in a Dutch oven over medium heat. Cook onions, garlic and bell pepper in oil for about 2 minutes.

In a medium bowl, combine paprika, salt and pepper. Coat beef cubes in spice mixture, and add to onions. Cook until brown on all sides. Pour in tomato paste, broth and wine. Combine well and cover.

Transfer dutch oven to oven and bake at 325 for 2 hours or until meat is tender. Alternately you could transfer to a crock pot and cook on low 4-6 hours.

Serve over dumplings, cooked noodles, mashed potatoes, or cooked rice.

Yield: 4 servings

1 lb browned ground beef
1/2 of a one pound box spaghetti noodles, cooked and drained
1 quart jar diced tomatoes or 1 (28 oz) can
1/2 can (2 oz) black olives, sliced
1 jar sliced mushrooms
1/2 cup onion, chopped
1 green or red pepper, diced
1 tbsp minced garlic
olive oil

garlic powder
italian seasoning
sea salt
black pepper
red pepper flakes, just a pinch (optional)

Cook and drain spaghetti noodles, add back to pot.

Put 2 tbsp olive oil in skillet, saute onion, peppers, mushrooms and minced garlic about 5 minutes.Add ground beef and brown. Drain off the grease and add meat mixture to the pot with noodles.

Add tomatoes with their juice, olives and season to taste with spices. Heat through.

Tip: Freeze leftover black olives. Place in freezer container and cover with the olive juice or water. Use in other dishes like Taco Chili

Pasty

Pasty - The Senseless Housewife

Yield: 4-6 pasties

Crust:
4 c. Flour
1/4 pound lard or shortening
2 tsp salt
1 3/4 c. ice water

Combine the flour, salt, and lard together with pastry blender till pea size. Slowly add enough water to combine; don't over work it. Wrap in plastic wrap and let sit at least 15 mins.

Filling:
1 pound pork steak, cubed
1 pound round steak, cubed
1 lg onion chopped
1 small rutabaga, cubed
3-4 carrots sliced
3-4 potatoes cubed
garlic powder
Lawry's seasoned salt
onion powder
pepper
parsley flakes.

Preheat oven to 375 F. Roll out dough, fill and put a pad of butter on top of filling before folding and crimping edges. Brush with a milk and egg wash and make a vent hole with slit of a knife. Line your cookie sheet with parchment paper for easy clean up, bake for 1 hour.

Sweet and Sour Party Meatballs
Yield: 5 dozen

1 can (16 oz.) jellied cranberry sauce
1 bottle (12 oz.) chili sauce
2 tbsp. firmly packed brown sugar
1 tbsp. fresh or bottled lemon juice
60 meatballs (frozen or homemade)

In a medium sized saucepan, combine cranberry sauce, chili sauce, brown sugar and lemon juice. Cook over moderate heat, stirring occasionally, until mixture is smooth and cranberry sauce is melted. Pour over the meat balls. Bake, uncovered, for 30 minutes

Creamy Mushroom Meat Balls

1 pound ground beef
¼ cup chopped onion
½ cup soft bread crumbs
1 cup sour cream (divided use)
1 tsp. salt and a little pepper
½ tsp. ground allspice
3 Tbsp. Oil (optional)
1 can cream of mushroom soup

Combine meat, onion, allspice, bread crumbs, ¼ cup sour cream, salt and pepper. Mix; shape into meatballs about 2 inches in diameter and brown in oil and drain on paper towels. Combine the remaining ¾ cup sour cream and the mushroom soup and add just a pinch of ground allspice and mix well. Pour over the meatballs and cover and bake at 375 degrees for 20 minutes. Remove cover and bake 10 minutes longer.

OVEN DIRECTIONS: To precook the meatballs in the oven, roll them into the size and shape you want, place on a foil lined cookie sheet and bake for about 20-25 minutes at 350 degrees, then place them in a casserole dish with the sauce and bake at 375 degrees for 20 minutes covered, then uncover and bake 10 minutes longer.

We love to eat venison. Sometimes the meat can have a gamey taste and can be a hit tough. To counteract this,  I marinate my venison in the fridge for two days in 2 c milk + 2 tbsp white vinegar. Rinse well in cold water. The family can't tell it from beef when I do this first. 

Venison Stew

Yield: 4-6 generous servings

4 tbsp butter
1 lb venison or beef roast, cubed into 1 inch pieces
1 small yellow onion, diced
1 tbsp minced garlic
2 stalks celery, chopped into 1 inch pieces
1/2 tsp fresh ground black pepper
1/2 tsp Hungarian paprika
2 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tbsp powdered beef bouillon
4 medium russet potatoes, peeled and diced into 1 inch pieces
1 cup carrots, scrubbed and diced into 1 inch pieces
1/4 cup pearled barley
5 cup water
1 tbsp cornstarch
2 tbsp cold water

Stuffed Cabbage Casserole

This is a favorite in our household. We have it almost every week, plus it is cheap and easy. I like to serve it with homemade bread or rolls and usually a nice veggie salad




Stuffed Cabbage Casserole

1 medium head cabbage, chopped into about 2 inch pieces
1 lb. ground beef (raw)
1 cup long grain white rice (or instant rice will work)
1 c. onion, finely chopped
3 medium potatoes, sliced
1 large (48 oz) can tomato juice or V8 (spicy V8 works great)
1/2 c sour cream
2 T. flour, divided
salt, pepper, paprika, celery seed

*Note: If you don't have celery seed you can finely mince celery leaves as a replacement.

Grease bottom and sides of crock pot. Put in half of cabbage and sprinkle with 1 tbsp flour, and a few shakes of each: pepper, paprika and celery seed. (I do not season with salt, but you may if you like).

Add potato slices on top of cabbage. Mix rice, raw ground beef and chopped onions together and add on top of potato slices in broken up clumps. Top with remaining cabbage. Sprinkle with additional flour, pepper, paprika and celery seed.

Pour tomato juice over everything. Cover and cook on low 8 hours.

Ladle off about 1-2 cups juice from crock pot and stir in sour cream well. Use this as a garnish sauce over individual servings.
